SHEET PAN THAI COCONUT PEANUT CHICKEN WITH PINEAPPLE
PROUD MOM MOMENT! Last night I made this family-favorite but unbeknownst to those eating it, I subbed almond flour for the flour, arrowroot for corn starch, coconut aminos for the soy sauce and used gluten-free panko and all natural PB. After we ate, I asked how it was and everyone said it was great as usual! Only THEN did I tell them it was gluten-free. :) Enjoy!
